Black Carrot Anthocyanins are natural, water-soluble pigments extracted from the roots of Daucus carota L. (black carrot). They are rich in anthocyanin compounds, primarily acylated derivatives of cyanidin, which contribute to their deep purple to red coloration and excellent color stability. Due to their acylated structure, they exhibit superior stability compared to non-acylated anthocyanins.
